- Preheat your oven to 350 degrees.
- Line three baking sheets with parchment paper.
- In a large bowl, mix together the flour, brown sugar, baking soda, salt, melted butter, sorghum, egg, egg yolk, vanilla extract, granulated sugar, and pecans until the ingredients form a smooth dough.
- Roll the dough into balls and arrange them on the prepared baking sheets, leaving space between each.
- Bake in the preheated oven for 9 minutes.
- Remove the cookies from the oven, and using a metal spoon, gently press the center of each cookie to create a divot.
- In the divot, add a spoonful of sweet potato butter, then top each dollop with a few mini marshmallows.
- Return the cookies to the oven and bake for an additional 1 to 3 minutes, or until the bottoms are golden brown and the marshmallows are melted.
- Let the cookies cool slightly before serving. Enjoy!
