Blackberry BBQ Chicken Halves
Blackberry Preserves aren’t just for biscuits. They make a great BBQ sauce that helps yield one of the juiciest chickens we’ve ever tasted. This berry-glazed bird pairs perfectly with creamed corn, macaroni and cheese, and hashbrown casserole. Plan well ahead though, this recipe requires brining the chicken for one to two days before cooking.

- In a large bowl, mix water, vinegar, bay leaves, garlic, and brown sugar. Set aside.
- Split chickens in half, removing backbone. Place chicken in brine and refrigerate for at least 1 day.
- Drain chicken and pat dry. Generously sprinkle with Dry Rub.

- Smoke or grill chicken for approximately 3 hours, or until internal temperature reaches 160 degrees.
- Remove from heat and coat liberally with BBQ Sauce.
- Place on grill or in an oven preheated to 350 degrees for approximately 5 minutes. Be careful not to scorch.
- Brush with sauce several times while turning chicken until sauce has caramelized and chicken is lightly charred.
