Country Ham Sweet Potato Hash
Here’s another recipe to add to your breakfast repertoire. Traditionally served with white or gold potatoes, a hash combines a starch with diced meat and spices and most often comes served with eggs sunny side up. Since sweet potatoes are at their peak in the winter months, we decided to use the orange spuds with our Country Ham in a warm, seasonal breakfast dish that comforts you from the inside out. Here’s the recipe.

- Melt the butter over medium heat in a sauté pan.
- Add all ingredients except for the eggs to pan and sauté until ham and potatoes are cooked through and slightly brown.
- While your hash is cooking, crack two eggs into separate pan and cook over medium heat until yolks are done to your liking.
- Serve your breakfast eggs and hash immediately.
