Bess Truman’s Ozark Pudding
A sweet recipe from 1951….. Bess Truman’s Ozark Pudding was one of President Harry S. Truman’s favorite desserts. This is a copy of the recipe as it was sent out to the people who requested it. This recipe comes from the Social Correspondence Office Files of the Truman Papers.

- Preheat oven to 350 degrees.
- Beat eggs and sugar a long time until very smooth.
- Mix flour, baking powder, salt and stir into the sugar-egg mixture.
- Fold in apples, nuts, and vanilla.
- Bake in a buttered pie pan in preheated oven for 35 minutes.
- Cool to room temperature and serve with whipped cream or ice cream.
