Southern Turnip Greens
While we use this technique for Turnip Greens at the Cafe, this recipe will work beautifully for collards, mustards, kale, or any other greens you might have on hand. Because greens can vary in bitterness with the season, this is a dish you’ll want to taste occasionally as you cook and adjust seasonings accordingly.

- Add canola oil to a large stock pot over low heat.
- Cook bacon until fat is rendered, stirring occasionally (approximately 5 minutes).
- Add onion, increase heat to medium, and cook until onions are translucent.
- Add ham, red pepper, Honey, vinegar, and water, bringing to a boil.
- Add greens, stirring until they boil down.
- Simmer for about 4 hours, adding more water as necessary so greens are covered in pot.
- Once greens are tender, season with salt and pepper
Note
The juice from cooking turnip greens is called “pot liquor” and can be used for dipping your biscuits or cornbread.
