Sweet Potatoes with Cranberries, Apples & Pecans

Serves 8-10

Ingredients:

3-4 sweet potatoes, peeled and sliced ¼ inch thick

1 cup dried cranberries

1 cup pecans, shelled

2 golden delicious apples, cored and cut into cubes

1 stick of butter, melted

1 teaspoon salt

1 teaspoon ground powdered ginger

1/3 cup lightly packed light brown sugar

Preheat oven to 350° F and lightly grease a large baking dish. In a large bowl, place the sliced sweet potatoes, apples, pecans and cranberries. Drizzle melted butter over top and mix well. Add remaining ingredients, toss to combine and transfer to the baking dish. Cover with foil and bake for 45 minutes. Remove foil and return until golden brown.
