Strawberry Salsa with Cinnamon Sugar Chips

Ingredients:

Salsa:

2 cups diced fresh strawberries

2 cups diced fresh tomatoes

½ cup diced fresh cucumber

¼ cup finely-diced red onion

¼ cup lime juice

sprig of fresh cilantro, chopped

sprig of fresh mint, chopped

1 jalapeno pepper, seeded and finely diced

Salt to taste

Chips:

12 flour tortillas

oil for frying

¼ cup granulated sugar

1 teaspoon ground cinnamon

To fry chips, heat oil in a deep pan or skillet to approximately 375° F. Cut the tortillas into wedges and fry a few at a time until golden brown and crispy. Mix granulated sugar and cinnamon together and toss with the chips. Set aside in an airtight container.

For the salsa, combine strawberries, tomatoes, cucumber, onion, lime, and jalapeno pepper. Mix well. Add fresh herbs and salt to taste. Refrigerate for at least two hours for flavors to combine before serving.

NOTE: This Strawberry Salsa recipe also makes and exceptional topping for grilled fish!
