As part of our National Biscuit Month Celebration, the chefs in the Loveless Barn have created some new recipes using our Loveless Cafe Biscuit Mix. This idea for a delicious dessert is one of them:

Pineapple Upside Down Biscuffin

Ingredients:

2 tbs butter
Pan spray
1/2 cup brown sugar
1 10 oz can pineapple chunks, drained
10 maraschino cherries
10 Loveless Cafe Biscuit Mix biscuits rolled and cut per package directions
1 quart whipped cream

Preheat oven to 400 degrees . Grease muffin pan with spray. Place 2tbs pineapple in bottom of each pan. Place rolled biscuit on top of the pineapple and form to pan  Mix butter and sugar and pour over top of the raw dough. Cook until golden brown.

To serve, place biscuffin pineapple side up. Top with 2tbs whipped cream and a cherry. Serve hot or cold.
