Peanut Butter Pie

This is one pie that’s always on the menu. Since peanut butter is popular among adults and kids alike, pairing it with rich chocolate makes it appealing to just about anyone (check out another one of our favorite chocolate-peanut butter recipes here). Of course, we had to take this one up a notch (in true Loveless fashion) and serve this delectable pie in a crunchy homemade chocolate cookie crust.

Preheat oven to 350 degrees. Add cookie crumbs, 2 tablespoons sugar, and nuts, if using, to a bowl and stir to mix. Pour in the melted butter and toss with a fork until evenly moistened. Dump into a 9-inch pie pan. Using your fingertips, pat the mixture evenly across the bottom and up the sides of the pan, pressing gently to pack it. Place prepared crust on a sturdy baking sheet and set aside.

In a large mixing bowl, use your fingertips to break up any lumps in the brown sugar. Add the corn syrup, half-and-half, peanut butter and vanilla. Using a whisk, mix the ingredients until smooth and completely combined. Whisk in the eggs and scrape the filling into the pie crust. Bake for 40 to 45 minutes, until the edges are puffed and set but the center of the pie appears soft and shimmies slightly. Let the pie cool completely before topping with whipped cream and a sprinkling of chopped peanuts.
