Whip this recipe up with chopped Loveless Cafe Country Smoked Bacon for an unmistakably delicious flavor that will melt in your mouth. Garlic, apple cider vinegar and brown sugar create the sweet yet tangy base for the potatoes and makes for the perfect side dish at a spring picnic or even on your Easter lunch table.



After you cook your New Potatoes, allow them to cool completely before cutting into halves (or quarters, depending on how small you want the bites to be). In the meantime, heat cook bacon and shallot with garlic over medium heat until the bacon is cooked through and the shallot is slightly caramelized. Drain the liquid from the mixture into a medium-size bowl. Add to the drippings apple cider vinegar, Dijon mustard, salt, black pepper and brown sugar, stirring until completely dissolved. Slowly whisk in Canola oil. Add the bacon, shallot and garlic mixture, chopped parsley and cubed New Potatoes to dressing and fold, taking care not to break the potatoes apart. Serve warm or at room temperature.
