Double Chocolate Mocha Cookies


You may have heard before that coffee brings out the flavor of chocolate. Well, nothing could be more true about these sinfully divine cookies. The addition of instant coffee makes them rich in chocolatey flavor and will melt the heart of any chocolate-lover. And just in case you were concerned we didn’t use enough chocolate in this recipe, we added in a heaping cup of white chocolate chips… you know, for good measure. These will most certainly delight at your next Christmas party.



Preheat oven to 325 F. In a bowl with an electric mixer, cream room temperature butter with sugar and brown sugar until light and fluffy. Add egg and instant coffee and incorporate fully. Sift flour, salt, baking powder and baking soda into mixture, half at a time, and mix until incorporated. With a spatula, mix in dark and white chocolate until fully combined. Place dollops of cookie dough on a parchment-lined baking sheet and bake until 8-12 minutes until edges just begin to brown.
