Double Chocolate Mocha Cookies




Preheat oven to 325 F. In a bowl with an electric mixer, cream room temperature butter with sugar and brown sugar until light and fluffy. Add egg and instant coffee and incorporate fully. Sift flour, salt, baking powder and baking soda into mixture, half at a time, and mix until incorporated. With a spatula, mix in dark and white chocolate until fully combined. Place dollops of cookie dough on a parchment-lined baking sheet and bake until 8-12 minutes until edges just begin to brown.
